Carrot Tzimmes

No one is sure what tzimmes means, though it might come from the Yiddish word for meal. There's also a Yiddish saying, "Don't make such a tzimmes," meaning something like, "Calm down, already." Anyway, a tzimmes is stewed vegetables or sometimes stewed vegetables and fruit. Some people add meat. The dish is usually sweet.

Here's my recipe for carrot tzimmes.

Ingredients:

  • About two pounds of carrots
  • Little bit of salt
  • 1/4 cup of honey
  • Juice from half a lime
  • 1/4 pound of unsalted butter
(1) Peel and slice the carrots. I use rainbow carrots, usually, because they're prettier, but regular carrots work just fine
(2) Put them in a pot with water to cover. Add the salt, and boil for about 12 minutes. 
(3) Preheat the over to 350 F or 175 C.
(4) Drain carrots, stir in the honey and lime.
(5) Put them in an oven-proof pan. Add the stick of butter.
(6) Roast for about 20 minutes, or longer if you like.
