Dutch Baby


Very easy, and also delicious:

Ingredients:

  • 3 eggs, room temperature
  • 3/4 cup milk, room temperature
  • 3/4 cup flour
  • One tablespoon sugar
  • Two tablespoons butter.
  • Dash of vanilla
  • Dash of salt

1. Heat the over to 400 degrees F.  Put your skillet in to get hot. Do this about half an hour before you start mixing up the baby. Also, put out your eggs and milk to get warm. 

2. If you forgot to put out the eggs and milk, you can heat the milk up in the oven for about 15 seconds. Run the eggs under hot water for about 30 seconds (while they're still in the shell, obviously!)

3. Put the butter in the skillet, which should already be in the oven and hot. If you don't have a skillet, by the way, you can just use a big pie pan. It needs to be big though.

4. Mix eggs, milk, sugar, vanilla, and salt, either in a blender or with a mixer, until mixed thoroughly. Then mix in the flour 1/4 of a cup at a time. Mix thoroughly. If you have time, you should let this mix set about five minutes. But if you have hungry kids, go ahead and move to the next step.

5. Take the hot skillet carefully from the oven, swirl the melted butter around until it coats the bottom and some of the sides. Then pour your batter straight in. The butter is going to gloop around. Don't worry.

6. Bake at 400 degrees for 20-22 minutes. Don't open the oven!

7. Pull it out, slice, and serve with either powdered sugar, maple syrup, or jam.
