Ingredients:
- 1 and 1/4 cup of whole milk
- 1 tsp vanilla
- 3 eggs
- 1 and 1/2 cup of all-purpose flour (King Arthur is the best)
- 2 tbsp sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
Instructions:
(1) Pre-heat your griddle or large frying pan. We want just above medium heat.
(2) Mix the vanilla and the milk together in a large bowl
(3) Separate the eggs -- make sure no yolk gets in the whites. Put the whites in a separate bowl. Put the yolks in another bowl. Mix a little of the milk-vanilla in with them and whisk until smooth. Then whisk this into the rest of the milk-vanilla.
(4) Mix the flour, one tablespoon of sugar, salt, and baking powder together. Then whisk this into the milk mixture until you have a semi-smooth batter. Don't worry if there are a few lumps.
(5) Add the other tablespoon of sugar to the egg whites, and then beat with a mixer until the whites stand up in stiff peaks.
(6) Gently fold the beaten egg whites into the batter. Don't over-mix.
(7) Your griddle should be hot enough by now. Rub some butter over it and then cook pancakes (I use a half cup of batter at a time) until brown and tasty.
(8) Meanwhile heat up your syrup just a bit in the microwave. Maple is our favorite.
Serve the pancakes hot off the griddle, with syrup and butter. Or whatever other toppings you like!
