Samosa Pie

This is my adaptation of a Samosa pie. You should feel free to adapt it to fit your own tastes!

Ingredients:

·       Pie crust (you can buy it or make it)

·       One stick of butter

·       One onion

·       One large or two small sweet potatoes

·       Two cups of cubed squash (any kind will do – butternut is good, but use what’s available)

·       One carrot

·       One cup peas

·       A couple of mushrooms

·       Flour

·       Curry powder

·       salt

·       Broth or water

Instructions:

(1)   Preheat oven to 350 degrees

(2)   Put the butter in a large stewpot over low heat. Dice the onion and stir it into the melting butter.

(3)   Peel and cube sweet potatoes and squash. Stir into the onion. Add curry powder, stir until the spices wake up. Peel and slice the carrot into small bits. Add and stir.

(4)   Add a handful of flour. Stir until flour is integrated.

(5)   Stir in two or three cups of broth or water – just enough to cover the vegetables. Stir.

(6)   Slice the mushrooms fine, and stir them in.

(7)   If you’re using frozen peas, cook them partially in the microwave, and then stir them in.

(8)   Add some salt. Stir. Cover pot and put it in the oven to cook for about 20 minutes.

(9)   Put the bottom crust in a deep pie pan, add the stewed filling, cover with a top crust.

Raise the heat on the over to 400 degrees. Bake for about 35 minutes or until crust is brown and filling is bubbling.
