Crustless Quiche



This one's not exactly cheap, but it is quick, and also delicious

Ingredients:

  • Three eggs
  • One cup cream
  • One bunch green onions
  • Four pieces bacon, fried crisp and cooled
  • salt, pepper, nutmeg
  • bread crumbs OR almond flour
  • A bit of vegetable oil

Directions:

(1) Preheat the oven to 375

(2) Grease a pie plate with a little oil, then dust the pan with either bread crumbs or the almond flour. (Almond flour works best if you're the sort of household that has almond flour.)

(2) Dice the white part of the green onions pretty fine. Crumble up the bacon into small pieces. Mix these with the cream and the eggs. Add salt, pepper, and nutmeg. (How much? Some. Like, a pinch of nutmeg, slightly more salt, and as much pepper as you personally like on your eggs. I like a bunch.) Beat all this together with a wire whisk until thoroughly blended but don't go crazy. We're not making a meringue.

(3) Pour mixture into the pie plate. Put in pre-heated oven. Cook for 30 minutes. Should be brown and yellow and puffy at this point. Remove and let cool on rack for about five minutes.

(4) Eat it all at once. This works best if a couple of you are eating, obviously. You can save some for tomorrow and reheat, but it's best straight from the oven.

I hear you can also mix spinach in this one, but we haven't tried that yet.
